Welcome
Time after time when my husband walks out of the door and I know he'll be gone a while, I always wonder "What's for dinner?" It's been almost 3 years of this lifestyle and every time he goes on deployment or training, I'm at a loss.
I've eaten the obvious- frozen dinners, macaroni & cheese, take-out. All easy, but unhealthy options. During our first deployment together almost 3 years ago, I wished someone had blogged about cooking for one in the military. Sure, there are cooking for one sites, but I want to read about someone that I can relate to- someone with a screaming kid hanging on their leg as they chop vegetables and do a dance, singing Raffi songs and praying their child can hold on 5 more minutes until the noodles are done boiling.
So this is why I'm here! I've done some research and come up with some good, quick, and somewhat HEALTHY options for us "single" moms that don't have a ton of time in between screams and silence (*gasp* silence?? something MUST be wrong!)And of course, trying to shovel in this meal while the kids scream, throw sippy cups and mush banana all over their body. I'll post along the way and make my suggestions as well as write about things I've done in the past that I know work!
I hope I can make something here- if not for anyone else, at least as a reminder to myself, what I can possibly throw together so I can survive on more than peanut butter and jelly sandwiches. Let's give this a whirl!
